Preparation of the palak paneer according to Pankaj's recipe

  1. Cook the frozen spinach in a pan. When it is ready, let it rest on the side
  2. In another pan: pour some oil. When the oil is hot, add half a tbsp of cumin seeds
  3. Add the onion and garlic at medium to high heat. Let it turn golden-brown, then add the ginger. Wait a few minutes for the mixture to get brown without stopping to stir to prevent it from sticking
  4. When everything has turned brown (or fried properly), add the tomatoes, previously cut into small pieces
  5. When the tomatoes are well cooked and the tomato skin has left the pulp, put it aside to cool
  6. When the tomatoes have cooled down, put the tomatoes and spinach together and blend them. Blend everything together to create a homogeneous mixture
  7. In a pan, heat up some oil and add some cumin, chilli, coriander and turmeric powder
  8. When the spices are a little browned, add the spinach and tomato mixture, stirring as you go along
  9. Then let simmer a little while stirring. Add about 100g max of crème fraiche and a little salt as per your taste
  10. Then let simmer between 5 and 8 min while stirring
  11. Time to add the paneer and leave for another 5 min!

It's ready. Enjoy 🎉🎉🎉
